pear and walnut loaf
preparation time: 10 minutes
cooking time: 45 minutes
ingredients:
6oz butter
6oz brown sugar
3 small eggs
6oz plain flour
1tsp baking powder
4 small pears (peeled and diced)
1/2 cup chopped walnuts
equipment:
1 loaf tin
1 loaf tin liner
method:
1. heat the oven to 180C
2. cream the sugar and butter together in a medium mixing bowl
3. add the eggs, one at a time, to the sugar and butter mixture
4. sift the flour and baking powder into the mixture and blend together thoroughly
5. add the pear and walnuts to the cake batter
6. spoon into the lined loaf tin
7. place in the pre heated oven for 45 minutes, or until the batter is firm and springy to touch
the quick and simple cake batter is very versatile and the pears and walnuts can be substituted for whatever you have in your cupboard, tinned or frozen fruit works particularly well
